As part of Rose's Chef of the Year prize, the trio visited food hot-spots Relae, Manfreds, Geist, gourmet restaurant Kong Hans Kaelder, Restaurant 108, and the world famous Hart Bakery where Rose was able to enjoy a range of culinary experiences and benefit from expert tips and advice.
The prize has also included placements with Matt Worswick who is chef at The Latymer restaurant, and Byatt and Tom Kitchin at the Verdura Resort in Sicily.
Speaking on the tip, Rose said, "Winning chef of the year meant that I was offered a trip of a lifetime. Not only did I get to eat at some amazing restaurants that I’ve only read and dreamt of, but I also go to see a City I've always wanted to go to.
"My experiences have been amazing. Going to Sicily with Adam Byatt to work alongside him and Tom Kitchin was incredible, as well as spending time with Matt Worswick and his team at his Michelin starred restaurant in Surrey.
“I’m so grateful for the knowledge they passed on. If it wasn’t for Bartlett Mitchell having a competition like this, I wouldn’t have the memories that will forever stay with me."
Redman commnted: "We really wanted Will to have a unique experience and chose Copenhagen to give him exposure to the food and concepts he wouldn’t normally see. As well as visiting these restaurants, he was able to spend time with myself and Adam, enabling him to gather any insight into his career development.
"Our approach to training and development mirrors our culture; we don’t like to offer ‘off-the-shelf’ programmes, but more a development package which suits the individual. This is really important.
"Whilst it’s important to develop skills, we believe that a successful chef should have the chance to be able to spend some social time with experienced chefs to allow for closer mentoring.
"We wanted to create an experience that would stay with Will for a long time, I still remember the first time I read the French Laundry cook book or the first time I ate at Midsummer House, L’enclume or Sat Bains, and I know Adam feels the same about his meal at Marco’s or Noma. They light a spark inside and continue to influence me even to this day, that’s what we wanted for Will or anyone who wins this great competition."
Byatt, chef patron of Trinity restaurant and chef consultant with Bartlett Mitchell, added: "The brilliant William Rose, this year’s much deserved winner, accompanied myself and Pete Redman to get under the skin of the foodie city that has had such a lasting impact on gastronomy.
"Whirlwind trips like this are rare and an incredible way to immerse yourself into a different and international food scene. Copenhagen is a remarkable city; its food is entrenched in its culture. I for one can’t wait to go back and hope that Will’s experience will stay with him for many years to come."
