Feeding Athletes at the 2019 Pan-American Games
Sodexo is the official catering and foodservice supplier for the Pan American and Parapan American Games in Peru which end on Sunday.
Charged with delivering up to 24,000 meals served to 6,700 competing athletes, the French multinational company has created two dining concepts inspired by local culinary traditions especially for the event.
“Lima Culinary Tour”
The first concept offers diners a culinary delight of popular Peruvian and regional dishes, including causa limeña (a traditional dish made with potato, seafood and pepper), fish ceviche, stuffed potato, tamales (a traditional Mesoamerican dish made of masa or dough that is steamed in a corn husk or banana leaf), solterito Lima bean salad and papa a la huancaína (a spicy appetiser of boiled yellow potatoes), salted pork, pescado a la chorrillana, ají de gallina, chicken escabeche and arroz con pollo.
“Inka Bio Market”
The second concept is inspired by the concept of a marketplace and offers diners a selection of fruit and vegetables – including tangerines, pitahaya (the fruit of several different cactus species indigenous to the Americas), blueberry, aguaymanto, apples, cacao, tumbo, peaches, zucchini, peppers, eggplant, broccoli, cauliflower, red and white onion, radishes.
Sodexo teams are also making menus and calorie information available in Braille to ensure equal access to menu information for athletes.
